1-What is your ‘go to’ bible verse to get you through the day? Psalm 46:10
“Be still and know that I am God.” I fell in love with this bible verse as it helped me get through a transitional time of life. I now have it tattooed on my forearm, to remind me daily.
2-Briefly tell us about a recent fun activity you and or your friends/family participated in.
My husband and I recently took our first trip with our four children to the beach this summer. Mason (7), Ellie (5), Ann (3), and Lexie (6months). We went to Vilano Beach, which is the St. Augustine beach I grew up going to. We created new family memories and ended the day with a delicious dinner at Saltwater Cowboys. They have a great menu and specialize with fresh caught seafood. Don’t miss their speciallty, the Dondanville Shrimp!
3-Do you have a favorite recipe or take-out meal recommendation you would like to share?
Our family favorite is easy bacon wrapped chicken. What’s not to love about bacon? Simply marinate chicken tenderloins 1-2 hours in low sodium Dale’s marinade, found at Publix. Wrap with bacon, I like the organic bacon from Aldi’s, drizzle a bit more marinade on the wrapped chicken and bake at 375 degrees for 20-30 minutes. Although my family loves it just like this, I serve mine topped with a little goat cheese and another drizzle of the marinade. Hope you enjoy it as much as we do!
4- At the start of the 2021 school year, Grace Church will be offering a new Children’s Ministry program, led by Grace’s very own member, Erin van Santen (Father Frans’s wife). While Erin is busy preparing, please share how a mentor, youth leader, or Sunday school teacher had an impact on you and why? I was blessed to have a wonderful youth pastor. His positive energy and encouragement made my shy self-much more comfortable. I attended his Vacation Bible School (VBS) as a teen, enjoyed a mission trip, taught VBS, and eventually became a VBS director. Our family soon realized that he was also our neighbor, and I had the good fortune to babysit his children. I am forever grateful for his leadership.
